#cppitaly #cppassport #cookpadindia This is a delicious bread kneaded with milk instead of water, rolled and shaped into buns. It ls great with both butter and Jam / jelly or Marmalade as breakfast or with cheese and cold cuts but I make it a bit bigger and use it as my burger buns You can eggwash with a little mix of milk or milkwash it only but sometimes I prefer to skip both the washes it works for me and still I get a lovely golden brown crust. To stick the seeds I simply apply water a bit gently on the top,if not doing eggwash or milk wash. If you don't want to add the seeds, simply skip it and just bake the buns. In my experience, the amount of milk or water needed depends upon the flour and climatic conditions too.

Steps to make to make Italian Milk Rolls / Milk Buns
- Mix all the dry ingredients first. Add the melted butter (or Veg oil) and mix and then add the lukewarm water and knead it in a big bowl (with larger surface area) or on the clean hygienic kitchen counter with forward and backward movement of your hand. It will take about 20 minutes to knead it into a smooth dough.
- Stretch and take it forward with the heel of your palm and bring it back towards you with the fingers, in this way it helps the gluten to develop and your flour binds together and dough turns out smooth. Once your dough is ready, apply little oil, cover with a cling film and proof it in a warm place of the kitchen for an hour. Prepare the baking tray by applying oil and sprinkling it with dry flour, bang and discard the extra flour.
- After an hour the dough doubles in size, the proofing time may vary from place to place depending on the temperature of the place. Punch the dough and flatten it. Knead it again for a minute and then divide it into equal small doughs- 4 to 6 depending on the size you want or more smaller if you want to make sliders or small dinner rolls. Give it the shape of small ball by tucking the dough underneath, until it forms a smooth round dough, keep it on the prepared baking tray.
- Cover it with a wet kitchen towel (cotton thin cloth or cheese cloth) and let it proof again in a warm place for an hour. When the proofing is almost done keep an eye on the dough, preheat the electric oven (@180°C) for 10-15 minutes. If you want to give eggwash or milk wash do it and sprinkle the sesame seeds/ Poppy seeds but I skip both the washes nowadays mostly. I just apply water with finger tips on the centre and sprinkle the seeds.
- Bake the buns in a preheated oven for 15 minutes or until done. When the buns are done, tap on the top crust, when you will hear a hollow sound, that means your buns are well baked.Take it out and brush with butter and let it be in the tray for 5 - 10 minutes and then keep it in a wire rack and cool it completely to room temperature. While cooling it's advisable to cover with a clean kitchen towel so that it remains moist, especially in dry kind of places. Bon Appetite!
