5. Add bed of rice to plate, and place snapper on top.
6. Turn heat to high and add cream, tomatoes, spinach and capers to pan. Cook together untill cream is a light bubble. Remove from heat and pour cream/toppings over fish and rice.
7. Top with oregano and serve
